Ingredients
- •200 g almond flour
- •5 tbsp psyllium husk powder
- •2 tsp baking powder for savoury bakes
- •1 tsp salt
- •4 eggs
- •2 tbsp cider vinegar
- •2 tbsp extra-virgin olive oil
- •240 ml hot water
Method
- 1Preheat the oven to 180°C and line a loaf tin.
- 2In a bowl, mix the almond flour, psyllium, baking powder and salt.
- 3Add the eggs, vinegar and oil and work quickly; pour in the hot water and knead until a compact ball forms.
- 4Transfer to the tin, shape the surface and score a slash lengthwise.
- 5Bake for 50-60 minutes, until the crust is golden and it sounds hollow when you tap the bottom.
- 6Let it cool COMPLETELY on a wire rack before slicing.

Psyllium is what gives structure and elasticity: without it, keto bread crumbles. Don't skip it and don't reduce the amount.
