Parmesan crisps with guacamole
Wafers of pure parmesan baked in the oven until super crisp, for dipping into a creamy guacamole. The 'party' snack that replaces crisps and nachos.

Ingredients
- •120 g grated parmesan
- •1 ripe avocado
- •1/2 lime (juice)
- •1 cherry tomato and a little finely chopped onion
- •Salt, chilli and coriander to taste
Method
- 1Preheat the oven to 180°C and line a baking tray with baking paper.
- 2Form small, well-spaced mounds of parmesan and flatten them.
- 3Bake for 6-8 minutes until golden; let cool (they turn crisp).
- 4Mash the avocado with the lime, cherry tomato, onion, salt, chilli and coriander.
- 5Serve the crisps with the guacamole.

The wafers stay soft straight out of the oven: they harden as they cool, so don't touch them until they're lukewarm.
