Ingredients
- •6 eggs
- •3 tbsp mayonnaise
- •1 tsp mustard
- •2 rashers of crispy bacon, crumbled
- •Paprika, salt, pepper and chives
Method
- 1Hard-boil the eggs (9 minutes), cool in iced water and peel.
- 2Cut them in half and remove the yolks.
- 3Mash the yolks with the mayonnaise, mustard, salt and pepper into a smooth cream.
- 4Fill the whites with the cream (use a piping bag for a fancy finish).
- 5Finish with paprika, crumbled bacon and chives.

For centred yolks and a nice yellow filling, start the eggs in already-boiling water and cool them immediately.
