Keto almond sablés, no sweetener
Shortbread made with nothing but almond flour, butter and a teaspoon of cream cheese: no sweetener at all — the sweetness comes from vanilla and a few pieces of 95% chocolate. A small batch, five biscuits, just over 1 g net carbs each.

Ingredients
- •50 g almond flour
- •20 g soft butter
- •1 teaspoon cream cheese
- •½ teaspoon vanilla flavouring
- •4-5 small pieces of 95% chocolate
- •Unsweetened almond milk: just a few drops, if needed
Method
- 1Preheat the oven to 170°C.
- 2Beat the soft butter with the cream cheese and vanilla until creamy.
- 3Add the almond flour and knead: you want a compact ball. If it stays too dry, add the almond milk one drop at a time.
- 4Fold in the chocolate pieces.
- 5Shape five balls, flatten them slightly and place them on baking paper.
- 6Bake for 10-13 minutes: they should stay pale, only just golden at the edges.
- 7Let them cool completely on the tray before moving them: straight out of the oven they're very fragile.

With no eggs and no sweetener, the dough holds together on butter alone: work it too long and it warms up, and the biscuits spread while baking. Knead the bare minimum.
