Ingredients
- •100 g almond flour
- •60 g unsweetened cocoa
- •80 g 85% dark chocolate
- •80 g butter
- •80 g erythritol
- •3 eggs
- •60 g walnuts, broken into pieces
- •1 tsp baking powder and a pinch of salt
Method
- 1Preheat the oven to 170°C and line a square tin.
- 2Melt the butter and chocolate in a bain-marie and let cool slightly.
- 3Whisk the eggs with the erythritol until pale and frothy.
- 4Stir in the melted chocolate, then the almond flour, cocoa, baking powder and salt.
- 5Add the walnuts, pour into the tin and bake for 20-22 minutes (the centre should still be soft).
- 6Let cool COMPLETELY before cutting: that's what keeps them fudgy.
