Ingredients
- •For the quick bread: 4 tbsp almond flour, 1 egg, 1/2 tsp baking powder, 1 tsp melted butter
- •2 eggs for the soak
- •3 tbsp double cream
- •1 tsp erythritol + cinnamon for the soak
- •20 g butter for the pan
- •To serve: soft butter, cinnamon and a dusting of erythritol
Method
- 1Make the quick bread: mix the almond flour, egg, baking powder and melted butter in a mug and cook for 90 seconds in the microwave.
- 2Let it cool slightly, turn it out and cut into two thick slices.
- 3Beat the 2 eggs with the cream, erythritol and cinnamon in a shallow dish.
- 4Dip the slices in the soak for 30 seconds per side.
- 5Brown them in the pan with the butter, 2 minutes per side.
- 6Serve with a knob of butter, cinnamon and a dusting of erythritol.
